How Food Allergies Are Developed
The most common food allergies among children on the autism spectrum are to gluten, the protein in wheat, and casein, the protein in dairy. These proteins have a very difficult time breaking down in anyone’s system, but particularly in our children.
Why? There are a few reasons. Poor food sources are becoming the norm. The wheat crops in America have become bioengineered to have up to 90% more gluten in them today. Our body doesn’t know what to do with that extra gluten and begins seeing it as a foreign agent to fight against. This then triggers a learned allergic response to that food. This can happen with anything, but wheat and dairy are also two of the highest inflammation creating foods. Inflammation creates chaos in the both the body and the brain.
Weak Digestion
The digestive tract of a child on the autism spectrum is usually weak from birth, yet this is often unknown to the parents. The child can develop reduced “good” gut bacteria and even an overgrowth of the “bad” bacteria in utero from mom. Too many sugars and processed carbohydrates in the diet can create an overgrowth of candida albicans. Candida is discussed in more detail in previous posts about behaviors and candida spores. As much as 80 % of our immunity comes from the gut. The walls of the gastrointestinal tract and our gut bacteria need to be strong to act as strong defense to toxins, bacteria, viruses, and more.
The pathogens in candida can and do bore holes in the lining of the intestines. They have legs on them that act as screws that cut open the protective walls of the GI tract. Wheat and dairy have very large protein molecules. These large molecules are harder to digest, or break down. I am using wheat and dairy as examples because they are strong common allergens in children on the autism spectrum, but please remember that this situation can happen with many different foods.
Undigested food particles end up leaking through the gut wall, and into the bloodstream where they become toxic to the body and all of its organs. This is where the term “leaky gut” comes from. These toxins make their way to the brain where we see symptoms such as anger, anxiety, lack of ability to focus, headaches, stomach aches, muscle aches, respiratory problems, inability to sleep, extreme fatigue, and much more.
